Cooking and Fermenting with Maine Wild Blueberries

Blueberries are as common in Maine as moose and lobster and come July, they can be found in great abundance through the state. While most folks tend to stick to the sweeter side of this delicious fruit, there are numerous ways to enjoy this low sugar fruit. 

Join Chef Frank Giglio and learn some of his favorite ways to prepare and preserve fresh blueberries. From infused vinegar to lacto-fermented salsa, Frank will share his professional and personal culinary experience to inspire more uses for this native fruit. 

This class is put on by Coast Maine Land Trust and will feature fresh blueberries from Beech Hill Blueberry Farm in Rockport, Maine. Participants can expect demo style + hands-on participation throughout the class as well as refreshments and tastings of all that we create. As an added bonus, each student will create a 1/2 gallon jug of blueberry mead to take home and ferment at home. Also, each participant will receive a coupon for 15 lbs B-grade organic blueberries from Beech Hill Blueberry Farm in Rockport.

  • Lacto-Fermented Blueberry Salsa
  • Blueberry Mead
  • Blueberry Infused Vinegar + Blueberry Vinaigrette
  • Ricotta Cheese with Blueberry Glaze
